I was trying to invent new pasta recipes one day and i stumbled upon a Jambalaya recipe. Unfortunately,, I did not have any fresh seafood or chicken, so I decided to create my own pasta using suasages (and ham) and some canned sea fare.
Surprisingly, it does not taste weird.The flavors actually compliment each other, and well, tis one dish im really proud of.
Here's how to make it:
Slice some Choriza de Bilbao, Hungarian Sausages and Ham. If you can not find Hungarian Sausaes, Chorizo de Bilbao or any other spicy sausage...do not make this dish... especially if you intend to use Vienna Sausage or Hotdogs. Eeeeek
If you are from the philippines and want to use longganisa, find one that isnt sweet
also slice some mushrooms, garlic and onions
Saute the garlic
add in the onions once you smell the garlic
add kin the sausages and cook them until they release their oils
Once your onions have gotten a reddish tint from the sausages, add in the ham
and then the canned tuna
and the mushrooms
add in all the spices you see below. Rememebr to rub the dried herbs between your palms before you put them in the dish. this makes the herbs release their oils. And please put a lot of turmeric. Like, 3 tablespoons or so. And if you have some smoked paprika, sweet paprika, or parpika de bilbao, add that too
and do not overdo the cumin. it could very easily take over the dish
add in the tomato sauce, some salt, and maybe even a bay leaf. (and sugar to counter the acidity of the tomato sauce) and voila! the dish is done
if you want, you could also add cooked squid , right before you serve it over some pasta.
