Quesadillas

Here is something you can prepare for your next Mexican themed party. Well, even if ur not screaming Viva Mexicana, this dish is perfect for any party, u just have to change the ingredients based on the theme of the party. But the recipe im gonna be sharing with you is very very simple, easy, and all ingredients are readily available in your groceries. they might even be in your pantry already. so take out a piece of paper and a pen and learn the art of making quesadillas, my dear partyphile.
Alright, so all you need is a can of pork and beans, a bag of nacho chips, pre-made frozen tortillas, some canned tuna, quick melting cheese, paprika, cumin, and parsley.
So here's what you do:
Heat the canned pork and beans and add in some cumin. I would have used salsa but the re weren't any tomatoes in the fridge. (thats my hairy hand.teehee)
Remove the pork and beans from the fire, transfer to a bowl and mash using a fork. This makes a thicker sauce, instead of a runny sauce with beans on it. I like the texture better especially since we're going to use it as a dip.
Set aside your bean dip.
For this batch i used whole wheat tortilla. I don't really taste the difference but i guess it's healthier for you.
Grab your frozen tortillas and make sure to peel the plastic off. Top it with some grated, quick-melting cheese and chunks of canned tuna in brine. Sprinkle some paprika and cumin too for added flavor and spice. Don't add salt since the cheese should make it salty enough.
Cover it with another piece of tortilla.
Fry in a non-stick pan with NO OIL. Once the tortilla puffs up you are good to go,. Make sure not to burn your quesadillas.
On a chopping board, slice your quesadillas into quarters.
Put them on a simple plate, put some of the bean dip on top of it, sprionkle with parsley. Serve with nacho chips and more bean dip.
This is tooooooo good, plus oits really really simple, and cheap.
